15. When should I hand in my evidence? Should I attach them to the Statement of Claim or Originating Summons?

The Statement of Claim or other pleadings, or the originating process (i.e. Writ of Summons or Originating Summons) shall not contain or be attached with any evidence.

You will have the chance to file and exchange the evidence with the other party to the proceedings at the stage of discovery after the close of pleadings.
